WWF approves our climate calculator in Menu Planning for One Planet Plate calculation

The WWF approves Martin & Servera’s climate calculator in the free Menu Planning service as a tool for calculating climate footprint according to the One Planet Plate method. This makes it easier for restaurants and catering companies to develop menus that are both sustainable and profitable.

With the Climate Calculator in Menu Planning, restaurants can easily calculate the climate impact per portion, test different ingredients and see how changes to recipes affect both climate, cost, nutritional value and margin. WWF’s approval means that the calculations in the tool can be used as a basis for the work with One Planet Plate.

– WWF’s approval of our Climate Calculator for One Planet Plate is an important seal of quality. We want to make it easy for our customers to combine business benefit with a lower climate footprint, and Menu Planning will be an even stronger support in that work. Now customers can optimize menus and have full cost control while meeting clear climate goals – in one workflow, says Emelie Hansson, Sustainability and Quality Manager at Martin & Servera Group.

One Planet Plate is the World Wide Fund for Nature WWF’s framework for meals that stay within the planet’s boundaries. It helps restaurants and catering companies set goals and monitor the climate footprint of their menus according to scientifically based criteria.

– Food accounts for about a quarter of a person’s greenhouse gas emissions, so there is a great opportunity to reduce them with more knowledge among key players in the catering industry. That is why we are pleased that Martin & Servera is now making research-based climate data available to its customers and we hope that it will inspire more people to serve One Planet Plate meals! Says Anna Wahlberg, responsible for One Planet Plate at WWF.

How the climate calculator works in Menu Planning

The climate calculator shows the climate footprint per portion (CO2e) at the raw material and recipe level.

Users can compare different raw material choices and recipe adjustments and immediately see the effect on climate footprint and cost.

The climate calculator is available in our digital Menu Planning service at no cost to our customers.
