December is often associated with heavy Christmas servings,
but the month actually offers a wealth of fresh and characterful ingredients,
that can lift winter menus.
The colder temperatures concentrate the flavor in the roots,
and you will find a particularly strong selection of crisp, juicy and colorful varieties right now.
The white and purple carrots deliver both sweetness and minerality,
the Chantenay carrot provides its characteristic crispness and deep, round flavor,
and the winter beets come in red, yellow and beautifully striped varieties – perfect for everything from pickling to baking.
In December, we also focus on the best of the season from the Mediterranean. It is precisely now that the most aromatic citrus fruits reach their peak – from ultra-juicy clementines to the crisp and perfumed finger limes and the stoneless lemons, which provide clean, elegant citrus notes without bitterness. You will also find a number of more special ingredients that deserve a place on winter menus: freshly harvested artichokes, smoked garlic with intense, sweet depth, and cime di rapa, which combines bitterness, green bite and nutty aroma.
